Cookie Dough Dip done Low-Cal
I'm sure a lot of you have seen Chocolate Covered Katie's famous cookie dough dip recipe floating around. I decided to make a couple swaps (from a combination of her different variations of the dip) to make it as low-cal as possible.
(Find the original recipe and a picture of what the heck cookie dough dip is, look here: http://chocolatecoveredkatie.com/2011/05/23/want-to-eat-an-entire-bowl-of-cookie-dough/ )
Ingredients:
1 can white beans, drained and rinsed (I used Northern beans)
5 tbsp chocolate chips
2 tbsp unsweetened applesauce
2 tbsp sugar free syrup (I used the butter flavor b/c that's what I had around)
3 tbsp oats
1 tbsp nut butter
~1/8 tsp salt
~1/8 tsp baking soda
2 tsp vanilla extract
(and I added a packet of Truvia b/c I like things extra sweet)
Toss all of the ingredients except the chocolate chips into a food processor and whir until it is a homogenous mixture. If it's too thin, add more oats. If it's too thick, add more applesauce. After it's all mixed up nicely, stir in the chocolate chips (I wouldn't recommend using the processor for this bit). Then eat! I have mine on top of fudge pudding or ice cream.
Two tbsp of this has 48 cals, and this recipe makes about 2 cups of it.
