vegetarian/vegan recipes please

this is probably going to sound odd coming from a guy, but does anyone know any good recipes? I am thinking on giving it a try for a week or two, money wise it is cheaper than buying meat... and other than the b12 vitamin and iron... I don't see any difference between normal meals and vegging meals...

    I started with meatless Monday's, then meatless Monday's plus no meat for breakfast or lunch, then I said,"let me go one week without any meat." When the week was up, I continued to go meatless every meal and transitioned into full vegetarian. It has been great! It's been 3 months since I had any meat and I feel awesome.

    Anyway, I never really liked spaghetti squash until I tried this:
    One spaghetti squash cut in half, seasoned with garlic and roasted x30-40 minutes
    Scoop out the "spaghetti" pieces, mix with spaghetti sauce, or even just some crushed tomatoes with Italian seasonings
    Place in casserole dish and sprinkle fat free mozzarella all across the top
    Bake for another 15-30minutes

    Spaghetti squash is, I believe, about 40cals per cup.

    One of my favorite recipes is so simple and quick!

    1 cup of cooked brown rice
    1 cup of spinach
    1 ripe avocado, cubed
    1tbsp earth balance vegan buttery sticks

    Saute cooked rice, and spinach in "butter" until the rice is heated through and the spinach is nicely wilted. Remove from heat.
    Add avocado and salt/pepper/spices to taste.

    When I first eliminated meat from my diet I thought about what meals I enjoyed and figured out where I could sub veggies or beans for the meat.

    Some of my other favorites are black bean burgers (morningstar brand for quick and easy), veggie stir-fry (whatever veg you have on hand), veggie fajitas (onions, peppers, mushrooms, squash sauteed or grilled)
