Easy Broccoli Chicken

Broccoli Chicken
taken & adjusted from Healthy Meals for Less cookbook
serves 8 (we make it to serve 4 but hey it's low cal enough to pull it off)

1/2 cup Soy Sauce
2 tbsp Natural Peanut Butter creamy
1/4 tsp Sriracha Hot Chili Sauce
1 cup water
2 tbsp corn starch
4 tsp vinegar
1/2 tsp black pepper
1/4 tsp ground ginger
1 tsp garlic powder
1/2 tsp onion powder
2 tbsp oil
1 pkg frozen cut broccoli (5 cups)
1 lb boneless, skinless chicken breast, cut into cubes

Mix all ingredients except oil, broccoli & chicken in a bowl. Set aside.
Heat oil in a wok or large skillet.
Add chicken and cook for a few minutes until no longer pink.
Add broccoli. Stir and cook until broccoli is thawed. (about 3 to 5 minutes on high heat)
Add sauce mixture and stir together.
Cook until sauce begins to thicken. (about 5 mintues or so)
Serve immediately. We like it with some seasoned brown rice.

    Sounds delicious, hope I can find sririacha hot chili sauce in my grocery store. What could I use in place of it?

    The hot sauce is in nearly every grocery store, you shouldn't have troubles finding it. If you do, go to a Mexican restaurant and ask them for a bottle to buy or a small amount for take out. My husband eats this like candy.

    I'd love to try something like this, but my hubby is allergic to peanuts (all tree nuts actually), would there be any way to substitute something else for the peanut butter perhaps?

    sounds nice, is it very peanutty? My partner doesn't like peanut butter and i'm wondering if I could trick him lol. Also could you just leave out the ginger or think of anything to subsitute it with?

    FYI, , Satay does not contain peanut butter.

    By the way, is the calories correct? seems quite low looking at all the ingredients.

    Sriacha is an asian hot sauce. You can either omit the hot sauce or use another brand. This is just the one we always use with asian dishes in our house.

    thinspiration - it doesn't actually taste like peanut butter. It all just sort of blends together.
