Cucumber, tomato, mozzarella cheese, vinegar and a little oil. Sometimes I add in beans too.0

Simple and tasty?
Sliced cucumbers
Nonfat Greek yogurt
Fresh dill
A little yogurt goes a long way. And the dill adds a great, cooling flavor. If you want to go crazy, add some tomatoes and use herbes de Provence instead of dill.0 -
Tomatoes (quartered, or smaller)
Cubed cucumbers
feta cheese
balsamic vinegar
easy. simple. delicious.0 -
For 2 small or 1 big serving:
1 cucumber
4 Tbsp. low-fat sour cream
salt, pepper, fresh or dried dill.
Half cucumber lengthwise and slice the halfs. Mix sour cream with seasoning and add to cucumbers. Let stand for at least 10 minutes. The cucumbers will release some water and you get more yummy sauce for your salad.0 -
2 large cucumbers
1 pint cherry tomatoes.
1/2 onion chopped.
2 Tablespoons of freshly chopped parsley
1 Tablespoon of Olive Oil
1/4 cup apple cider vinegar
salt and pepper to taste
Toss and enjoy.0 -

I don't think it qualifies as a salad at all, but one of my favorite snacks is sliced cucumber, lemon, a little salt, and tapatio.
It might be a little high on solidum for some people, but in all fairness the ice cream man even sells this around here (SoCal).0 -
Slice hothouse cucumber thiny and add equal parts sushi wine vinegar and water. Add some fresh or dry dill. Let sit while you are making dinner. Irresistible, and fat free. Cucumbers are apparently quite good for protecting the blood brain barrier!0

This is my husband's recipe:
2-3 large cucumbers peeled and sliced
1 medium onion sliced
Blance cucumbers with near boiling hot water and let soak until cool. drain off half the water.
Add onions and vinegar and wella, you have a great cucumber salad.0 -

I like to take a large cucumber and peel it. Slice it down the middle long ways and scoop out all of the seeds with a spoon. Then I'll pack the hollow with tuna salad, egg salad, chicken salad, etc. So good. Makes an awesome light lunch.0

Love this one...Thai Cucumber salad
3 large cucumbers, peeled, halved lengthwise, seeded, and cut into 1/4-inch slices
Dressing:
1 tablespoon salt
1/2 cup white sugar (i use sweet n low)
1/2 cup rice wine vinegar

This is my favorite Cucumber Salad. Simple and easy.
One cucumber slice
Distilled white venigar
Red wine venigar
Salt
A pinch of sugar
Black pepper
Mixed all ingredients. Leave in the fridge for 30 minutes. Enjoy!1 -

We always do the super thin sliced cucumber in vinegar and water, toss in a pinch of salt and white pepper.0
