Easy, cheap vegetarian recipes, do they exist??

I've been a vegetarian for ten years but just recently realized that I can't really cook vegetarian food. My diet specially this past year has mainly consisted of frozen pizzas and chips or easy (read BORING) stuff like noodles or brown rice with corn or other vegetables and curry and soy sauce. Not exactly inspirational. I'm also a student so I don't have that much money to spend on food.
So I'm asking you to share your bestest, easiest vegetarian recipes, please Extra points for being cheap, too. I live in Finland so we may not have all the same ingredients as say in the US so if I don't know what something is I'll ask for a clarification.

I get pretty much all my recipes from marthastewart.com. I keep to a decently tight budget of mostly organic food for 5 people. I was vegetarian for 10 years but started eating meat when I got pregnant with my first child. I still try to make at least 2-3 vegetarian dinners each week. There are a lot of recipes from Martha Stewart that are easily made vegetarian or that are easily modified with your favorite vegetables.0

I like red and green jalapeno peppers, take out the insides, and stuffed with light cream cheese and sauteed onions and garlic. Bake at 350 degrees for about 20 to 25 minutes. So yummy. Almost all your calories are in the cream cheese, so measure it out. It's a lot of food, though. (Can be done with soy cheese, but not nearly as yummy.)0

My vegetarian roommate mixes a can of cream of mushroom soup, a can of cream of celery soup, a can of green beans (or 2) and some cooked rice together and microwaves it for a quick comfort food. It's not all that healthy but she can get all the ingredients cheap.0

Mushroom Stroganoff :: I make it with whole wheat pasta
I also don't make the mushroom broth as stated in the recipe, I just use a can of beef broth (equal to 2 cups) but I am betting with the mushroom based broth it would be even more amazing...I usually use white mushrooms not portabella... also, use reduced fat sour cream at the end NOT heavy cream.

I'm an omnivore, but love vegetarian fare, especially Indian. Lots of flavor in Indian cuisine. Try www.showmethecurry.com. Any recipe on the site is vegetarian and they have videos to show you how to make the dishes. My favorite is the Pav Bhaji (http://showmethecurry.com/subzis-vegetables/pav-bhaji.html). Really yummy! Veggie Chili
Ingredients
1 cup uncooked quinoa, rinsed
2 cups water
1 tablespoon vegetable oil
1 onion, chopped
4 cloves garlic, chopped
1 tablespoon chili powder
1 tablespoon ground cumin
1 (28 ounce) can crushed tomatoes
2 (19 ounce) cans black beans, rinsed and drained
1 green bell pepper, chopped
1 red bell pepper, chopped
1 zucchini, chopped
1 jalapeno pepper, seeded and minced
1 tablespoon minced chipotle peppers in adobo sauce
1 teaspoon dried oregano
salt and ground black pepper to taste
1 cup frozen corn
1/4 cup chopped fresh cilantro
Directions
Bring the quinoa and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes; set aside.
Meanwhile, heat the vegetable oil in a large pot over medium heat. Stir in the onion, and cook until the onion softens and turns translucent, about 5 minutes. Add the garlic, chili powder, and cumin; cook and stir 1 minute to release the flavors. Stir in the tomatoes, black beans, green bell pepper, red bell pepper, zucchini, jalapeno pepper, chipotle pepper, and oregano. Season to taste with salt and pepper. Bring to a simmer over high heat, then reduce heat to medium-low, cover, and simmer 20 minutes.
After 20 minutes, stir in the reserved quinoa and corn. Cook to reheat the corn for 5 minutes. Remove from the heat, and stir in the cilantro to serve.0 -

It is a middle eastern dish. Basically cooked lentils (rice too, if you want), topped with caramelized onions and yogurt (or sour cream). Use just a bit of olive oil to start the onions caramelizing, plain low fat yogurt, or low fat sour cream to top it with! Delicious0 -

Lentil soup with garlic and onions:
(I par-boiled the swiss chard to remove any bitterness first and to tenderize them, then added them at the very end)
1 1/2 cups lentils
2 1/2 lbs fresh Swiss Chard (I many times sub spinach)
1/2 cup olive oil
3/4 cup chopped onion
3 to 4 garlic cloves (love my minced garlic from costco)
Salt (used seasoning salt and pepper)
1 Stalk celery, chopped (or not)
3/4 cup lemon juice
1 teaspoon flour (use more or none at all)
Wash and pick over the lentils. Cover them with fresh cold water, and cook, covered, until tender. (I boiled these ‘til soft and then threw away the water and sludge to prevent my man's gassiness LOL), then set it aside to add back later. Heat olive oil in a skillet and add the chopped onion. Crush the garlic cloves with salt, and add these and the chopped celery to the onion. Continue cooking until the vegetables are tender and blended. Add the cooked lentils and the washed spinach/chard or other greens. Mix the lemon juice with the flour and stir it into the soup. (I added water to make it more soupy, and then I added any kind of stock while it's boiling) Cook gently, stirring occasionally, until the soup is rather thick. Taste for seasoning and adjust as necessary. This dish was a hit amonst both vegetarians and meat eaters when I brought it to my friend's house for Indian food night. (I added cayenne pepper, coriander and chiles to spice it up for a nice Masoor Dal dish)
A tip with the lentils, though, is not to add salt until after they're cooked. Apparently if you add it earlier it makes them hard or something. Haven't experienced this myself, but it's what I was told.

beans and rice..............super cheap and you can season it so many ways, and use different beans to keep it fresh. Add veggies if you have them and it makes for quick easy inexpensive meals.0
