Also, spaghetti! Add some wine to the sauce and saute the meat in garlic, olive oil and Italian spices! One of my favorites! Make it even healthier by using whole grain pasta (Angle hair taste best in my opinion) or go lo carb and have it over eggplant or squash.0 -
Turkey enchiladas
Ingredients
For the sauce
1 tbsp olive oil
1 onion, chopped
1 garlic clove, crushed
200ml/7fl oz passata
1 tsp chopped fresh oregano
½ tsp freshly ground black pepper
For the turkey
1 tbsp olive oil
1 garlic clove, crushed
1 red onion, chopped
1 red pepper, seeds and core removed, finely chopped
1 courgette, diced
170g/6oz turkey mince
85g/3oz low fat cheddar cheese, grated
4 wholemeal tortillas
Preparation method
1.Preheat oven to 180C/350F/Gas 4.
2.To make the sauce heat the olive oil in saucepan over a medium heat. Add the onion and garlic and sauté for 4-5 minutes, until softened.
3.Add the passata, oregano and black pepper. Cover , reduce the heat and leave to simmer for ten minutes.
4.Meanwhile for the turkey, heat the olive oil in a separate pan over a medium heat. Add the onion, garlic, red pepper and courgette. Sauté for five minutes then add the turkey mince. Cook for around 5-7 minutes, or until the turkey mince is browned and cooked through.
5.Add half of the cheese to the turkey mixture and continue to cook until the cheese has melted.
6.Divide the turkey mixture between four tortillas and roll up into parcels. Place into an ovenproof dish, spoon over sauce and sprinkle with remaining cheese. Place into the preheated oven to bake for 15-20 minutes, until golden.0 -
I use my turkey mince to make turkey kebabs or burgers!
Same recipe for both
450g Turkey mince,
1 small onion chopped as small as possible,
seasoning (I use parprika, garlic, cajun spices and ginger)
Mix together and make into small 2 inch oval kebabs (about 10/12) or 4 burgers. Then either grill or put in oven. I have them with salad or rice. If making kebabs I also grill some chunks of peppers, mushrooms and onions with them.
Or make a bolognese with it x0 -

Thai turkey burgers (turkey mince and thai red curry paste)
Turkey koftas...turkey mince, ground coriander and cumin, fresh chopped coriander and mint.
Turkey mince chilli, bolognese, it all works eqaully well0 -
You could make a chili con carne, brillaint - full of veg and pulses for extra protein, plus super flavourful and filling! I have a good recipe somewhere if you want it0

It's really good in meatloaf. Basically, use it as you would use beef mince and it's so much healthier0

LARB! ( Thai minced/ground turkey/chicken/pork or beef salad served in gem lettuce cups)
This is seriously good, its fragrant, zesty, spicy (although you can make it mild if you like) and flavoursome.

Thanks so much for these great ideas. Actually just realised I have pork mince as well, haha so some great ideas here. I am going to go with the LARB tonight, love spicy stuff but will serve on basmati rice for some carbs. Nom nom nom!!!0
