Okay so I eat ALOT of chicken, and not much beef product! I need some new healthy ideas for cooking I am really starting to dread my same old baked chicken! Anyone have any good ideas!! Thanks in advance!!

Like you, I eat mostly chicken and have run into the same problems. I agree with the sentiment about a crockpot! I got one a bit ago and it was one of the best investments I've made into my kitchen so far (next to my rice steamer).
Also, I also cut it up and make meals with it. Spaghetti, sandwich wraps, spicy jambalaya, soups and chilis! One of my favorite chicken meals is chicken enchiladas, which can be made pretty diet-friendly with a little tweaking: fat-free cheeses and sour cream, white meat chicken, and wheat tortillas. I LOVE them, I make them at least once a week.0 -
i eat a lot of chicken too....not much dark meat...i usually eat chicken or ground turkey.... my fave recipe is spaghetti!!
1 cup of spaghetti squash has like 40 cals so i will have 3 cups of squash, 1/2 cup (100g) ground turkey and 1/2 cup pasta sauce

Chicken tortilla soup is something I can make in 5-10 minutes with leftover chicken and I love it.
2 cans of chicken broth
1/2 cup salsa
leftover chicken, shredded
one can of white shoepeg corn, drained
one can of black beans, drained and rinsed
cilantro (dried or fresh, optional)
Put all ingredients in a pot and simmer for a few minutes
Serve over a few baked tortilla chips crushed in a soup bowl and top with a little low fat Mexican cheese

Find a good taco seasoning recipe, steam the chicken breast in chicken stock and seasonings.
Shred it up put lettuce tomato onion on corn tortilla with light sour cream and taco sauce.
Also, there are some good ground turkey recipes like a turkey chilli or burger.0 -
I like to roast vegetables using a bit of salt, pepper and olive oil. Lots of vegetables can be roasted in the oven in about 30 minutes on 400F and many squashes (like butternut squash) can be pretty filling.
For an easy meal under 300 calories, roast an eggplant (about 120 calories per serving/3 servings per large eggplant). After roasting drizzle with a few ounces of marinara sauce (depending on which you use, roughly 25 calories per ounce). Add a small chicken breast grilled with lemon pepper (approx. 125 calories) and your just under the 300 calorie mark. Careful with the marinara sauce.
Remember when making eggplant to slice it, cover it in salt for about15 minutes then rinse it - otherwise it will be somewhat bitter.0 -
Are you looking for other recipes using chicken - or other ideas all together? I am vegetarian so I do not eat any chicken but some ideas that came to mind:
Chicken Tacos or ground turkey tacos - if you have never had - try them, its better tasting than beef.
Grilled Chicken burger - so many options going this route.

experiment with new sauces to drizzle over the chicken.
pound the chicken until its flat, then spread cheese and broccoli in it, roll it up and bake it.
make healthy chicken tenders.
add it to a bell pepper cup with other ingredients(veges and cheese)

Dump three or four cut up chicken breasts into a crock pot with salsa and black beans and simmer while you're working. Simple, healthy, and delicious...you can eat it over brown rice if you want, but I don't do that many carbs, so I usually serve it with a veggie packed spinach salad. YUM!0

Maybe try looking at some vegetarian meals instead? Loads of yummy veg in tomato based sauces make a really quick and healthy meal; also roasted aubergines with basil and mozzarella cheese slices over make a good accompaniment to something like sausages (could have quorn ones).0

For chicken: I put it on the George Foreman grill and then slice it up and put it in wraps with hummus, onion, tomato & cucumber
For non-chicken: Take a tilapia filet, cover it in seasoned bread crumbs, bake at about 375 til done (maybe 20min?) and serve with a whole grain and a salad or roasted veggies. SO easy, virtually no prep and it'll get you a serving of fish.0 -

I have a yummy recipe I use with my leftover grilled chicken. It isn't super low calorie, but its big on taste! It's a great meal to please your family and effortless to make. I serve it with a large green side salad. That way I can eat a small portion and still feel very satisfied.
Chicken Noodle Casserole Recipe
1 can (10-3/4 ounces) condensed low fat cream of chicken soup, undiluted
1/2 cup mayonnaise
2 tablespoons lemon juice
2 cups cubed cooked chicken
1 small onion, chopped
1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper
1 cup (4 ounces) shredded reduced fat Monterey Jack cheese, divided
1 cup (4 ounces) shredded reduced fat sharp cheddar cheese, divided
12 ounces medium egg noodles, cooked and drained
In a large bowl, combine the soup, mayonnaise and lemon juice. Stir in the chicken, onion, peppers, 1/2 cup Monterey Jack cheese and 1/2 cup cheddar cheese. Add noodles and toss to coat.
Transfer to a greased 2-qt. baking dish. Bake, uncovered, at 350° for 30-35 minutes. Sprinkle with remaining cheeses. Bake 10 minutes longer or until vegetables are tender and cheese is melted. Yield: 6 servings.0
