Any ideas for an awesome dinner with avocados? I don't feel like cooking something, so maybe something easy. In theory, I could eat it plain, but.. that's not really fun.

Great in sandwiches or wraps. Or if you want something even simpler than that just eat avocado with crackers (hopefully the healthier cracker versions available:-) )

Yes, this is perfect! With cheese, in a pita, with seasame sticks as a snack!0 -
I like to smear them like a spread on sprouted grain toast. It's yummy!0

Hm, I love avocados and have them for a meal a lot, but I eat them pretty much on the plain side. Usually I'll just mash one up and season it with some seasoning salt and garlic powder. I eat it with bowl of Pretzel Thins and it's totally delicious. They're just as good as tortilla chips but are lower in fat and calories.0

I make tuna salad and fill half an avocado with it. It's the bomb dot com.0

I eat them raw because it tastes SO good I don't want to mix it with other stuff. It's like chocolate and mixing it with something hehehhe

Avocados and salmon is to die for. Halve one, scoop it out as needed to spread on whole grain crackers and then top with a slice of smoked salmon for an amazing snack/meal. If you need it extra creamy, you can mash them with fat free cream cheese and then use them as previously suggested.0

My fav is eggs, so an omelete with salsa or quiche even.
Or it's great with I buy these jumbo uncured franks from Trader joe's and eat them with that (low carb meal) and they taste good with sausage links I have no idea why.0 -
Hytop - Fancy Shredded Cheddar Jack Cheese, 1/3 cup
Eggs - Hardboiled, 3 Large
Wishbone - Lite Ranch, 2 Tbsp
Fresh Express - Baby Spinach, 0.5 cups
Stonefire - Tandoori Roti White, 1 naan
Haas Avocados - Small Avocado, 1 small avocado

Chopped avocado, rinsed canned black beans, chopped tomatoes, lemon or lime juice. And maybe some frozen or canned corn.
Serve with chips or not.0 -

Directions for the best avocado:
1. TAKE YOUR DELICIOUS (AND RIPE- ever so slightly squishy... enough squishiness to be mashable) FRUIT AND SLICE IT IN HALF. Deal away with the pit of doom in whatever way you wish.
2. TAKE ONE HALF and store the other half for later, geez, this stuff is filling ok.
3. ADD SALT, PEPPER AND HOT SAUCE.
4. OR, PREFERABLY, SUB HOT SAUCE WITH SRIRACHA SAUCE
5. Mash mash mash
6. EAT WITH SPOON

I just top mine with stevia, it tastes so sweet, smooth, and creamy!0

Avocado is super delicious diced and mixed up with:
Whole black beans
Lime juice
Chopped fresh cilantro
A scoop of your favorite salsa
Salt and a bit of minced garlic. Or, skip the salt/fresh garlic and use garlic salt instead.
Above is what I would consider the essentials... Depending on how you feel about starches/carbs, some fresh or frozen corn kernels added in are fantastic. Best thing is... you can tweak what ingredients and their portions according to what you like best. It can be as simple or as kicked up as you like
Additional options would include...
Finely diced onion
Diced jalapeno or other peppers
Cayenne pepper
Cumin
Fresh tomato

Once made it is very very versatile...
Eat plain as a chopped salad, add extra protein by adding some grilled shrimp. Delicious warm or cold.
Use as a topping for grilled fish or chicken, or on a cracker or thinly sliced baguette as a crostini
Put inside a tortilla and add a little cheese and/or meat and warm in a non-stick for a quesadilla
Make a lettuce wrap
Use as a dip for chips, or other crunchies
Add to some chicken broth in a pot and bring to a simmer for a super yummy and quick soup0 -
