I want to make some veggie puffs, but it calls for butter. I gave up butter 11 months ago when I started this diet, but Idk what to use in it's place. So how is vegan butter? It is ok for u? Opinions?

Not sure about vegan butter (I'm allergic to soy), would subbing coconut oil work or does the recipe call for beating the butter w/something?

Coconut butter? I've never heard of tht! I learn something new all the time. Is it with the rest of the butter in the store?

Smart Balance is vegan and you can get it in any grocery store. My favorite is Earth Balance, which I have to usually get at places like Whole Foods or Sprouts.

I think you mean coconut oil, not butter, which you can use but it doesn't have the same flavor.

Yes Earth Balance! It has a soy free version too for those with soy allergies.

I believe it is, yes. It's made with olive oil or flax seed and is supposed to be better for your heart. I started using it before I went vegan at my doc's recommendation ... then I discovered earth balance which is even a step healthier.

My two cents: Earth Balance tastes better than Smart Balance. I don't have a hard time finding it - Trader Joe's, most (larger) grocery stores too.

I haven't tested it as a baking substitute yet...

Soy-free Earth Balance is great if you can find it! Depending on your level of soy intolerance, the original Earth Balance might be okay too...it is mainly a combination of oils, not much soy protein in it.

Works perfectly for all your baking needs!

Earth Balance is amazing!! It is wonderful for baking, way better then regular margarine. We buy the soy free one at our local grocery store. Its a hard margarine, a lot of the other vegan ones are soft and not great for baking.

Earth balance has soy-free, dairy-free "butter" and I also use raw coconut oil (its hard like butter).
