Lunch? help!

Hey MFP's! I just wanted to ask and see if anyone had some goods ideas for lunch! I invited my boyfriend over for lunch and I don't know why I did because I don't know what to make for him! I just need a reasonable meal, I've got plenty of calories to play with, but want to make something killer for him! Any suggestions would be greatly appreciated! Thanks!!!

    there is an awesome garlic shrimp recipe in the recipe forum that is OUTSTANDING if you like shrimp that is ... good luck on making lunch for your bf

    Thanks for the idea, unfortunately I have no shrimp! lol...I'm not sure if he likes couscous either....I was thinking something pretty easy, he isn't picky..but I still want it to be outstanding since this is the first time I'll have really cooked for him--besides cookies/snacks. Keep the ideas coming please!

    What about a pizza? You can buy whole wheat pizza dough at trader joes and then put whatever you want on it! Or theres always the good ol' bomlini (sp?) crust that you can use!... thats already cooked so easier

    enchiladas? Or a taco bar or potato bar (the advantage of these is you can have alot of the stuff prepared ahead, so you can spend time with him, not your kitchen).

    Thanks everyone...think I might go with chicken enchiladas! Hope he enjoys!:embarassed: It's easy enough and yummy to boot! Plus protein packed for the both of us! Wish me luck! lol
