Eggplant!

I have so much eggplant coming out of my garden right now, I can hardly keep up! I love baba ghanoush, but I am looking for other recipes besides. I have roasted about a million pounds of it to have baba ghanoush throughout the fall & winter, but need other ideas because my freezer if filling up FAST! Also, keep in mind I do NOT like the texture of eggplant when cooked, the sogginess grosses me out :noway: Any suggestions other than fried?

    Hi I did not like eggplant much, until I saw this recipe and was looking for some meatless meals. This version of eggplant parmigiana does not require crumbing and cooking the eggplant first, so it is a much healthier version and I love it. I use a good amount of garlic and herbs in the passata. It freezes well too, and is a lovely meal served with crusty bread. Sandy.

    Grill slices on the bbq.you cqn do them plain or with a drizzle of olive oil and steak spice. They taste sweet and you can get beautiful grill lines across too.

    I make a vegetable lasagna with roasted zucchini, eggplant, onions, and peppers. After I roast the veggies I layer them with the lasagna noodles, marinara sauce, and a mixture of egg and ricotta cheese. I top it off with some mozarella and parmesan cheese. This dish also freezes well.

    Thin slices in place of pizza crust, works great and not soggy.

    ^^ My fave fave FAVE!!! Look up any Indian "brinjal" curry..... you can use bigger eggplant for this recipe, just cut one whole one into discs and "stuff" the discs....

    Hi! So glad you like that idea. here are a couple of others that sound delish as well. i haven't tried them yet, but am definitely going to. Wish I had a garden full of eggplants they aren't too cheap here at the moment. :)

    Great ideas! I am especially digging the lasagna and the curry, the latter of which would involve a trip to the store for some of those ingredients! Not even sure what they are, LOL, but certainly eager to find out!
