help me plan my mini-vacation menus!

We're going on a little vacation to an eco-village and bringing our own food. I may update this original post throughout the day as I realize what I have on hand and what I don't. We're vegetarian, closer to vegan. We don't eat "meat replacement" products. No bread, rice nor pasta as main ingredients. A little on the side is okay, but not preferable.

There is a full kitchen available, but because it's shared I prefer to make as much as I can at home and bring it.

What I'd like you to do is make "meal ideas" for us so we can make the most of what we have and not have to buy much more. We are making one small trip to the store today to pick up odds & ends, so your help would be nice. I need to make my lovenugget a little list

Also because it's summertime, we're not really eating full "meals" every day. Only when it's cool enough to use the oven.

So far, this is what I'm making today for the trip:

Baba Ganoush
Roasted Pepper Hummus
Almond/ Basil Pesto
Hard boiled eggs
Parsley quinoa salad with lentils

and this is the fresh produce we have to take:

2 large zucchini (one meal is possible to make zucchini "pasta" and use with the pesto)
4 stuffing peppers (one meal is planned to stuff the peppers with the quinoa salad & cheese)
2 medium cucumbers
2 small beets
2 fresh garlic
Frozen grapes
Bing cherries
Fresh basil

(store prepared / grocery list)

Feta cheese
Monterey jack cheeese
Wasa fiber cracker
Olive medley
Peanut butter
Coffee
Spring roll wraps
Cellophane noodles

I will edit the list as ideas come along!

    I don't have "meal" suggestions but I have a salad recommendation. It's a New York Times recipe for Lentils with ginger and lemon flavor. If you google the recipe, you'll fnd the ingredients/directions. Most are things that you would have in your home pantry. I've added a variety fruits/veggies to the basic salad
    carrits, oranges, dried apricots, sweet potato---at different times. Chopped walnuts are also a great addition.

    What about a cucumber salad? Its cool and fresh for summer and you already have cucumbers. I'm assuming you also have some extra virgin olive oil at home, salt and pepper and perhaps some red wine vinegar? Just cut up the cucumbers, mix in some olive oil, salt, pepper and a bit of red wine vinegar if you have it. Can spice it up with some red onion and plum tomatoes if you want to pick them up. Tons of variations on this online.

    both of those recipes sound delightful!

    after making the baba ganoush, i decided to make a (fresh) falafel mix to fry up there, too. so the 2nd round of chickpeas are stewing right now. the cucumber salad especially sounds like it would pair nicely. i do have all of that except the red wine vinegar. I have balsamic & rice vinegar, though...and maybe even apple cider vinegar.
