cottage cheese stuffed tomatoes!

A simple, quick and yummy dish for any time of the day!

One serving calls for:

Half of a large tomato
1/2 cup of your favorite cottage cheese
1 teaspoon EVOO
1 teaspoon of your preferred vinegar (I use red wine vinegar infused with garlic)
Salt and pepper

Take the half cut tomato and cut out the inside to hallow it out and make a sort of bowl. Slice the insides and set aside. Salt and pepper the tomato bowl and drizzle with EVOO and vinegar. Fill the seasoned tomato bowl with cottage cheese and top off with the sliced tomato pieces.

This recipe can also be used with a peach instead of a tomato for a sweet version (forget the salt, pepper, and dressings of course)
