Trader Joe's - Organic Low Sodium Chicken Broth, 1 container (4 cups) 60 calories
Onions - Raw, 1 medium (2-1/2" dia) minced 46 calories
Spice World - Garlic, Minced, Spices, 3 tsp 0 calories
Generic - Ground Cumin, 1 Tablespoon 22 calories
Spices - Oregano, dried, 1.5 tsp, ground 8 calories
Kroger - Great Northern Beans Dried, 1 container (3 3/10 cup dries ea.) 1,170 calories
Generic - Yellow Sweet Corn (Kernels Cut Off Cob), (1/2 cup) 72 calories
Texas Pete - Hot Sauce, 2 tsp 0 calories
Kroger - Boneless, Skinless Chicken Breast, 3 breasts 384 calories

8 HUGE servings for a total of 220 calories per serving. 1 gram of fat, 41g carbs, 23g protein, 82mg sodium.

I used dry beans and cut kernels off fresh ears of corn. Piled everything but chicken in the crockpot and put on low for 8 hours. I cooked chicken breasts in oven on 375 for 30 minutes and then cut/shred with fork and added to crockpot 15 minutes before serving.

Garnished with low fat sour cream and green onions.

Please note you will have to season to taste. Since the beans have no sodium, some may find this needs some flavor. I wanted to keep it low sodium so I did not add any salt.

    It is such a good dish! My kids love it too - especially when you add the fun toppings to it & eat it with tortilla chips. I tried cooking it once in my slow cooker, but didn't care for it done that way for some reason.

    I do think next time I will try it on the stove top instead of crockpot. The beans didnt get as soft as I would have liked.
