Eggs in a (Avocado) Hole

Saw this on Whole Food's facebook page and had to make it this morning for breakfast.

ingredients:
1 egg
1 avocado
salt & pepper to taste
oil or some sort of nonstick spray

directions:
1. preheat your pan
2. add oil / nonstick spray
3. you take the avocado, slice it in half, then take a slice it lengthwise about 1/4 to 1/2 inch thick
4. scrap out a bit to accomodate an egg
5. add the avocado (with skin) to the pan then carefully crack an egg and place it in the hole
6. cook on each side for 2 minutes

done.

each one is about 160 calories, depending on the thickness of your avocado.
you could just put egg whites in the middle as well to keep it lower in calories.

    I make this all the time - top with a bit of salsa and it's delicious! Another breakfast staple for me is to mix together a chopped hard-boiled egg, 1/2 a chopped avocado, a diced light string cheese, and a bit of salsa.

    Love this and anything with egg and avocado together. Today I had a piece of whole wheat toast, spread 1/4 of a ripe avocado like butter on top, then added an ounce of smoked salmon and an easy-over egg. Yoke-y deliciousness for 260 cals and 19 grams of protein.
