What you will need:
1/2 Avacado
1 Tomato
1/2 shallot
1 cup shredded Kale
1/2 lemon
In a bowl add Kale, lemon juice, shallot and avacado. With your hands mash the avacado into the kale.
Add a few slices of grilled chicken if you like.
At the end top with tomato's sprinkle some salt and pepper and your good to enjoy

I am excited to try this. I love cooked kale with onions. It's a hard veggie to love and I haven't found very many ways to eat it that I like. I stick to one recipie. Now I have TWO!0

An amazing way to eat kale is to saute a little garlic in a little olive oil, then add 2 big hand full of chopped kale, sautee a little bit 2-3 minutes. Then add 1/4 cup of water and lemon juice mixed together and put a lid on it. When it is bright green it is done!0
