Looking through my diary i've noticed that most of my meals repeat. I think i need to mix it up a bit. What are some good low-carb snacks and meals that I can add to my diary?

Vegetables are what you're looking for. Broccoli, cauliflower, squash, spinach, kale, asparagus, brussel sprouts, cabbage, etc.
There's a ton you can do with veggies to make them into meals.

Grilled asparagus with poached eggs and parmesean cheese
    Mashed cauliflower with garlic
Broccoli fritters (broccoli, egg, a tiny bit of flour (almond meal if you really want to be super low carb), cheese, garlic)
    Roasted brussel sprouts with bacon
    Squash spaghetti with meat balls
    Kale stir fry
    Cauliflower crust pizza

For snacks, I love turkey and string cheese! It's great for before a workout. Dinner... The first thing that comes to mind is the dinner I made last night, which was turkey meatsauce (and veggies) over baked spaghetti squash. 1 cup is around 17 carbs
