Cooking Ideas???? Need Help!!!

Does anyone have any suggestions of a healthy cook book with recipes for two. My boyfriend and I are very picky eaters. I am trying to not eat fast food any more so that leaves me with basically spaghetti to cook really. The best way to put is we are both 24 almost 25 and we eat like kids lol. But I am open to trying new things. I just need something that gives me a balanced diet and is not to fancy. Any help would be great :)

    I am not the best cook, but I have found numerous healthy recipes in Cooking Light, a magazine. I used to just buy the issues at the store, but now I am a subscriber. The meals are simple (aka easy to make), super fresh, and they make calorie counting a breeze because they list all of the nutritional information for each serving. It includes cholesterol, fat, sugar, fiber, and more. It's not really a book, but you can also visit their website for a taste. I have all my mags in a drawer, and it's about a foot thick now. Haha. I love digging through them for ideas.

    Do you like smoothies? I have a smoothie everyday and it is usually less than 300 calories for a quart! Last night's smoothie:

    1/2 cup lowfat yogurt (plain or vanilla tastes fine)
    1 cup frozen peaches
    1/2 cup green grapes
    1 cup fresh parsley
    2 stalks celery
    1/2 cup orange juice

    Place in blender and blend until smooth (times vary depending on your blender). It is light and refreshing and not too sweet. This smoothie has 2 servings of fruit and 2 servings of veggies. If the taste of parsley is too strong, try fresh spinach instead.
  • Basic one pot cooking is for you, how about veg curry (without the potato) I make a squash tomato and spinach one its really low cal and so tasty - I dont bother with rice either. Also things like stir frys are quick, easy and healthy. I love cooking so much. X

  • Crock pot cooking is easy and virtually fool proof. I also love grilling. Right now our favorite veggie is bok choi, and we have been marinating baby bok choi (cut in half minus the big leaves) in a lemon zest vinaigrette (one zest of lemon, two lemons juiced and about 1/3 cup olive oil), and then grilling them for about 6-7 minutes per side. Take them off the grill and put them back in the marinade for a few minutes. They are delish!! Grilling is easy -- chicken, asparagus, zucchini, eggplant, so many choices, and easy!

    Thanks everyone. I will be able to look through more when I get home. I briefly browsed some of the websites and these look really good! Thanks for the help and tips.

    I do like smoothies but I just started working out at 5am and then I go straight to work so I can't make any. But I can definetly make them on my days off! Good idea :)

    I do have a crock pot but I have never used it. I will have to look into this.
