Blueberry Strawberry Banana Apple Cinnamon Muffins

★ I found a recipe online but changed it up to make it a bit healthier... It originally just had blueberries too 
Makes 6 muffins <
Double ingredients below to make a dozen (makes sense to me anyway...)
1 large egg ★ I used 3 tbsp liquid egg whites to reduce cholesterol
2 tablespoons fat-free sour cream ★ I used fage 0% greek yogurt to add protein
2 tablespoons lowfat buttermilk ★ I used vanilla Silk cuz who has buttermilk??
1/2 cup oat bran ★ Didn't have this on hand but I used rolled oats thru a food processor
1/3 cup whole-wheat flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups mashed banana (about 3 medium) ★ I used 2 large bananas
2 tablespoons brown sugar
1/2 cup blueberries, fresh or frozen, unsweetened ★ I also threw in ½ c of strawberries
1/2 teaspoon grated orange zest (optional) ★This I did not use
The batter does turn out a bit thick so I added ¼ cup of unsweetened applesauce with some ground cinnamon
Heat oven to 375º. Coat a standard muffin pan with cooking spray. Whisk egg, sour cream and buttermilk in a bowl. Mix oat bran, flour, baking soda, baking powder and salt in a second bowl. Combine banana and sugar in a third bowl. Stir in buttermilk mixture. Sprinkle in flour mixture and stir gently. Fold in blueberries and zest, if desired. Fill muffin cups 3/4 full with batter. Bake until an inserted toothpick comes out clean, 15 to 20 minutes. ★My version took about 23 minutes bc I did double the whole recipe to make a dozen.

Oh oh. I actually have most of the ingredients on hand, and can improvise with the rest. I might be forced to bake some of these this weekend....they sound yumtastic. Thank you for sharing0

Just a quick suggestion - buttermilk can be made at home by adding 1 tablespoon of vinegar for every 1 cup of milk. Just combine the two, set it aside for about 10 minutes and voila - you have buttermilk. Note: works for skim, full-fat, and soy milk as far as I'm aware0

Just a quick suggestion - buttermilk can be made at home by adding 1 tablespoon of vinegar for every 1 cup of milk. Just combine the two, set it aside for about 10 minutes and voila - you have buttermilk. Note: works for skim, full-fat, and soy milk as far as I'm aware
