It sounds like natural fluctuations - water weight - not real weight gain. Just keep going and weigh again next week. You'll probably be down 2 pounds by then.

It sounds like you may need to start with some ice to reduce the inflammation. Then you will be better able to assess exactly what is hurt. There are quite a few muscles in and around the knee, and even a hip issue could cause the knee pain.

Potassium is one you're much better off getting from food. Supplements can make you go over too easily, which can mess with your heart, among other things. Low potassium can be a problem, but diet is the best solution. If it's not a problem, just focus on a very healthy, well-rounded diet.
