Currently in the oven is a cheesy, cauliflower and chicken bake (with onion and bacon)...it smells delicious, we shall see!

We tend to keep it pretty simple, protein and veggies...every once in a while we get creative with cauliflower pizza or something else. It's not too difficult once you get going!

I don't really bother with breakfast, my husband though either has eggs or banana with peanut butter and walnuts. he doesn't worry much about calories though so that works for him!

I am going to make zoodles and meatballs tonight! I don't add breadcrumbs to my meatballs, maybe a little almond flour. So good!

Hasselback Chicken Breast - one variation, but you can stuff it with lots of things. Pepperoni, cheese, and a little pizza sauce. Broccoli and cheddar. Mushrooms, onions, and goat cheese: http://tiphero.com/hasselback-chicken/

Frittatas with meat, cheese, and veggies - ham, broccoli & cheese; spinach, artichoke, sun dried tomatoes & bacon; poblanos, onions, chorizo & pepper jack cheese

Tilapia/flounder/cod with chili-lime compound butter (I like this with black bean and corn salsa, but that might push the carbs too high)

Skillet cordon bleu: http://www.skinnytaste.com/skillet-chicken-cordon-bleu/ You could go with full fat cheese and ham if it fits your macros better. You'd also be fine not dredging it in the little bit of flour, but the sauce won't thicken as much. It just tasted really good, and the leftovers were still tasty.

As of now my diet consists of chicken, cheese, beef and unfortunately a lot of processed meats (pepperoni, ham, turkey, and meat sticks) isolate protein by Body Fortress because the carbs are really low. I mix that with unsweetened vanilla almond milk and peanut butter. I also drink Crystal light energy throughout the day for my caffeine fix. Breakfast is more of a challenge for me because I don't eat eggs. One of my favorite meals is sautéing Brussel sprouts or cabbage in a pan with olive oil, one clove of chopped garlic beef broth and bacon pieces.

Had a cast iron skillet spiced up chicken thigh, spinach, and a gravy made from the chicken thigh fat and heavy whipping cream.

Fathead dough is my absolute favorite. It's easy to make and my non keto family even eats it. I use the recipe at ditchthecarbs.com or google "Fathead pizza the holy grail"
