    I had a hot chilli beef salad today - lush!

    It was:

    100g watercress and spinach leaf salad (create a bed on your plate)
    5 cherry tomatoes (cut up and sprinkled on spinach)
    2 tablespoons lighter than light mayo (on the side)

    In a frying pan combine:
    Half a chopped yellow pepper (fried till just soft)
    0.2 cup chopped red onion (fried till just soft)
    Chopped chilli frozen cube (fry the veggies in)
    4 sprays of fry light (used to fry everything in)
    100g quick cooked beef strips (fried off in pan with veggies)

    Cals- 213

    After frying - sprinkle on bed on salad.

    Bit of a cheat last night - was out with friends and went to Pizza Express. I tried one of their new Leggera range, which has the middle of the pizza removed and filled with a mound of rocket salad.

    It was absolutely delicious, I havent had pizza in ages, but this came in at 500 cals, salad included - win!

    Yum, I love salads :)

    Sometimes, I'd have an almond salad. (I'd just throw some lettuce, cucumber, bell peppers together, along with 15 almonds. The whole salad in tolal is around 159kCals.)

    tuesday was a salad with avocado, cucumber, raspberries and feta with oil and vinegar.
    cals = 343

    wednesday was the lettuce and tomato pile that accompanies the mexican food, drenched in green chili.
    cals = 151

    today was a salad with pepperoni, sugar snap peas and peppercini's.
    cals = ? (did not track - it was part of an italian buffet lunch)

    I hope it's not to late to join. I have been posting my salads on FB so I will switch to posting them here. Since it is after 9pm and I am done eating for the day I will start tomorrow.

    As promised I am here today with a salad. Mixed greens and spinach with an avocado, tomato, and raisins. I used a poppy seed dressing from Drew's brand. I am trying to figure out how to upload the picture

    I call this a baked potato salad:

    0.5 a large russet potato, baked (in microwave) and diced
    1 medium hass avocado, diced
    2 hard boiled eggs, diced
    1 thin cut chicken breast (sauteed w/o oil), diced
    all tossed in 2 TBS Hidden Valley southwest chipotle dressing

    HUGE meal, just 725 calories.

    yesterday i had a side salad with lettuce, radishes, yellow cherry tomatoes and blueberries. cals = 119

    today, i ordered the pear, walnut and gorgonzola salad from the elephant bar for supper, but my eyes were bigger than my stomach and i didn't eat it. i did eat a ton of veggies (lemon cucumber, purple and yellow carrots, plum tomatoes, and purple and yellow green beans), but not an actual salad.

    Yesterday I had a very simple insalaat tricolore - I had some basil leaves which were starting to wilt so I saved the best of them, chopped a tomato on the vine (could have had a better flavour) and half a ball of half fat mozzarella, torn into lumps. Drizzle of walnut oil, good grind of black pepper.

    I had a spicy jicama salad, it had; black beans, mango, jicama, and lettuce with a citrus lime cilantro vinaigrette. I had a side of chicken breast. I'm having the same salad tomorrow but with tilapia.

    yesterday was a house side salad from chilis (215 cals) that i combined with my lunch portion of chicken fajitas. total cals were around 650.

    today, i had a 1/2 greek salad from panera. cals = 190

    Tonight I'm having my Mediterranean inspired salad with quinoa, cucumbers, chickpeas, cherry tomatoes and feta with a side of lentil soup.

    Last night we has a ceasar salad along with grilled lamb steaks. Hubby isn't much of a salad eater, but ceasar is one that he does like.
