Mexican Chicken Spaghetti

I can't not share this recipe, it's way too good to be true. Only 160 calories.

I promise it taste better than it looks haha.

Just an FYI don't let the word *Tofu* make your nose go in the air. It almost made mine, but I miss chicken spaghetti so much and I wanted to find away to clean it up and make it close to as good as I remember without being horrible for you.

2- packages of the Shirataki Tofu Noodles (in the tofu section of HEB)
1- can of reduced fat or healthy choice Cream of Mushroom soup
2- cups of shredded chicken ( I used HEB boneless skinless chicken thighs)
1- 6oz HEB Plain Greek Yogurt (you can use any greek yogurt to replace sour cream)
1-can of Rotel Diced tomatoes with Mexican lime and Cilantro ( You can use any flavor of rotel)
1-cup of reduced fat or 2% shredded Mexican cheese (I used kraft)

Boil your chicken, shred it, poor all ing except for the cheese in a casserole dish, cook at 350 F. For 35 minutes, add in your cheese and cook additional 5 minutes or until cheese is melted. Enjoy! 160 calories per serving, serves 8 people.

    This sounds good...going to try this with zucchini noodles instead of the Shirataki Todu Noodles... I have tried them several times and just dont care for them :/
