Very low calorie creative meals

Alright, so after a few weeks of being on a break maintaining I'm ready to hop into the wagon again. I feel like doing the every other day diet where I eat 500 calories one day and roughly 2500 the next.
Now I'm fine with skipping breakfast, but I have a problem sticking to one meal, so I tend to have lunch and dinner.
I know all the basics of a very low calorie meal: chicken and broccoli, soups, green salads.. etc
I also know a few creative options like different kinds of soup, zucchini noodles and mushroom casserole, roasted cauliflower, tuna and tomato salad.. etc.
I'm looking to expand my recipe arsenal with meals that are less than 250 calories yet sizable and satisfying. I like all kinds of vegetables except for celery and beets. I dislike meat, I can do fish and chicken but not often.
If you have a tasty low calorie secret recipe, soup, grill, casserole, stir fry, anything, please share.

I found this recipe on Skinnytaste.com and the whole family loves it. It is quite filling and low cal. I think it was 200 calories/cup...but can't recall for sure so verify this. BTW - this was the number 1 downloaded recipe of 2012...make it and you will know why. Super easy to make too.
