Hi everyone
So, I'm lactose intolerant and also ridiculously uninspired. I want to get some sort of menu together for the week ahead for me and my other half. Rolls and filling for lunch followed by something-flavoured chicken and rice/pasta is just dull.
I've also moved house and all my recipe books are in storage. Plus I'm juggling a full-time job and just started a Masters.
Send help in recipe format pls!!!

A quick google search using "vegan" or "paleo" will get you lots of great ideas!0

Breakfast: toast with nut butters, porridge with soy or almond milk, fruit salads, soy yoghurt + fruit, healthy vegan breakfast muffins, eggs in any form
Lunch: salads + protein / wrap with salad and protein / nut butter sandwich / hummus sandwiches / roasted vegetables + protein / dairy free soups / eggs on toast / beans on toast
Dinners : wholemeal pasta with vegetables + protein or red sauce / warm salads / sweet potatoes with protein and greens / brown rice with steamed veg and protein / jacket potatoes / stir fries / bean casseroles
snacks : nut butters with bananas and vegan dark chocolate / nuts / fruit / cold pressed fruit bars
just a few ideas, you don't really need recipes they are pretty straight forward0 -
What type of meals did you eat before you went dairy free? Most of my meals do not contain dairy, so I'm not sure what type of diet you are changing from.
Soups, chili, stew, stir fry, steaks or chops with roasted vegetables and/or rice, salads, sandwiches, pot pies, ...0 -
This is great with steamed edamame. A fast meal and by the looks of things you could use fast meals.
Inside Out Egg Roll

Serves 3-4
Ingredients
1 Tbsp canola oil
1/2 a roll of reduced fat pork or turkey breakfast sausage
1 or 2 garlic cloves, grated
1" piece of ginger, grated
1 bag (16 oz.) Cole slaw mix
Soy sauce (reduced sodium) to taste
1/8 tsp. Chinese five-spice powder
Salt, white pepper and red pepper flakes to taste
Optional garnishes:
Green onions, sliced
Toasted sesame seeds
Fried Chinese noodles
Directions
Sauté sausage in oil until brown. Add garlic, ginger, and slaw mix; saute until it starts to reduce in size. Add soy sauce, five spice powder, salt and peppers to taste. Sauté a little longer and serve. Garnish with any or all garnishes from above.0 -
Try out which dairy substitutes you like then start using those instead of ones with dairy. I became lactose intolerant and egg intolerant years ago. You learn to adjust, read your labels. My cooking hasn't changed in the sense of now instead of butter I use dairy free margarine, etc... things like that.
You can eat the same as you used to, with substitutes.0 -
Brown some ground turkey, mix in some green or red peppers, onions, garlic and mushrooms and add a can of low sodium diced tomatoes. This can be put over baked (microwaved) potatoes or in the middle of two corn tortillas or mixed with pasta. Or make it without the mushrooms and you can still mix it with any of the above, or stir in a can (or partial can) of black beans or kidney beans, add chili sauce and you have chili. By making the base you can have several different meals during the week (which may help with your schedule.)0

Stir fry is one of my favorites. You can make your own teriyaki sauce to cut down on calories and sodium, and put a ton of veggies in. No dairy. I'm also lactose and I find that as long as I make my own food, it isn't hard to avoid. It's only when I eat out I have an issue.0
