Egg & Sausage "muffins"

I just made these this am for brekkie and they are awesome!!

Pre-heat oven to 350 - spray muffin tin with non-stick cooking spray

Need: 3 slices bread (mine had 70 cal./slice)
3 eggs (mine were 70 cal ea)
6 Jimmy Dean Turkey Sausage Links
1/3 c shredded cheese (could use 1/2 of that amount)

Cut 6 circles out of bread with a med. biscuit cutter or small glass - so they will fit in the bottom of the muffin tin. Lay them in the muffin cups and cut sausage links in half and put 1 link on each slice of bread. Top with equal amounts of beaten eggs and shredded cheese. Bake at 350 for about 15 mins - rotating halfway through if needed. I topped mine with a little salsa.

Calories - 128.5 - I counted 130 w/ salsa each. 11 g of fat total. If you cut the cheese in half - cal - 108 and Total fat - 10. I suppose you could use 1/2 sausage link also to cut another 20 cals and 3.5 g of fat.

    those sound yummy! I think I will try them with turkey bacon instead. yum
