Apple Gingerbread Cobbler
3 apples
3/8 cup sugar
2 teaspoons lemon juice
Filling
Crust
1/4 cup sugar
1 cup flour
1/4 teaspoon salt
3/8 teaspoon baking soda
1/2 teaspoon baking powder
3/8 teaspoon ginger
3/8 teaspoon nutmeg
1/4 teaspoon cinnamon
2 tablespoons melted butter
1/2 cup [sour] milk
1/4 cup molasses
1 egg
wash pare core and slice the apples place them loosely in a casserole or baking dish do not pack tightly together sprinkle with the lemon juice and sugar place uncovered in a 450 degree oven for ten to fifteen minutes while the gingerbread crust is being mixed
sift and blend the dry ingredients for the crust then combine the liquids the melted butter milk molasses and beaten egg lightly stir these into the dry ingredients mix only lightly do not beat spread over the hot apples reduce the oven temperature to that of a moderate oven 350 degrees bake 40-50 mins serve hot with plain cream whipped cream or orange sauce
