recipes that have volumes but low calories

please share recipes that have volume but lower calories and are still yummy, this will help us with our low calorie consumption goals.

    One I make quite often that is easy, tasty, and fills you up but is still low in calories is a simple veggie chicken stir fry I make.
    All you need:

    Whatever veggies you like (broccoli, carrots, bell pepper, onions, etc.), chopped.
    A clove of garlic and a similar amount of ginger
    About 1 chicken breast per person, minus the skin, chopped in 1 inch pieces
    1 cup of chicken broth
    1 Tbsp corn starch dissolved in water

    Heat a wok very hot and add just a bit of oil (1 tsp or so) until it's hot, then throw in the veggies. Cook those for about a minute.

    Add the garlic, ginger and chicken broth and bring to a boil.

    Add the chicken and let cook until chicken is cooked through.

    Add the corn starch slurry to thicken the broth, then taste for salt and pepper.

    Very tasty, very healthy, and very filling. Serve over brown rice if you so desire.
