How do you make sure you hit your protein goal and stay under the correct fat intake?

Well, first of all, I'd question what the "correct" fat intake is. If you're using MFP default values, your fat goal is probably pretty low.

For me, my fat and protein goals are minimums. As long as I hit those, I fill the rest of my calories with carbs and/or more fat/protein.

To answer your question, though, you can choose low-fat proteins: boneless skinless chicken breast; non-fatty fish; protein powder; low or non-fat Greek yogurt.

If you are following MFP's defaults use the protein and fats as minimums and carbs as a maximum. But if you want low fat protein options look at lean meat, egg whites, low fat cheeses, cottage cheese, low fat Greek Yogurt

The only goals I pay attention to are calories, protein, sodium, and fiber. The rest can take care of themselves. MFP's automatic goal setting for fat is much too low imnsho.

I don't worry about eating too much fat. I aim for 0.8 grams*lean body mass in protein as a minimum and 0.3 grams*total body mass in fat, again as a minimum.

I have a goal of 165g of protein a day, I still have issues hitting my fat goals. My protein comes from chicken breasts, turkey meat/sausage, greek yogurt, cottage cheese and protein powder. To combat the fat shortage I am adding some higher fat protein sources. Switching my cottage cheese to 2% or 4%, also looking into getting 2% FAGE greek yogurt instead of 0% but I keep forgetting. It is that low fat mentality that keeps taking over ;)

Too many calories are bad. They discovered that fat isn't the villain they thought. It makes food tasty and helps satiate. Focus on getting enough protein, as many carbs as your personal goal is, and keep a calorie deficit.

I am 25% Protein, 50% carbs and 25% fat. As long as I am close to it doesn't have to be exact. Calories as a whole are your most important thing.
