Body fat percentage and cutting weight for mma.

Hello, I'm still working on my weight loss goals, I've lost 80 pounds so far and am continuing to drop steadily. I would like to partake in mma competition once I reach my goal, but I'm having a little bit of trouble in planning. I hopped on a body analysis machine thingamajigger that gives tons of information about my body, each limb weight in water, muscle, fat, etc. It cost $25 at my doctor's office, she recommended I hopped on to get some info about my body.
Now this was many months ago, and since I took the analysis I have lost more weight, but at the time I had 51% body fat, and my skeletal structure, vital organs and muscle alone (No body fat, no water, etc) I weighed 186 pounds. I had quite a lot of muscle because I do lift a lot of weights at the gym. This threw a bit of a wrench in my plans because I always wanted to get down to 185 and the doctor told me with the muscle I have, (Which she doesn't want me to lose), that's an impossibility.
I was hoping to get to about 12% or so of body fat to feel comfortable for competition. I also wouldn't want to cut too much water weight before the competition because I don't want to put my body in danger outside of competition. The doctor thought that if I weighed around 240 pounds or so, I'd be at 20% body fat. Well, I'm only 5'11" and personally I don't want to weigh 240. I would much prefer to weigh 210 at the highest, but I also don't want to drop below 10% body fat.
Is there anyone here with recommendations on what I should aim for to meet my goals of competing at 185 pounds? I'm thinking if I weighed 210, I could cut 25 pounds of water weight. If I could cut less, that would be fantastic. Or should I attempt to get rid of some muscle? I'm a little lost at what my goals should even be anymore. All I know is that I don't want to have a ridiculously low % of body fat and I also don't want to have a high % of body fat, and I want to compete at 185 and I don't mind cutting some water weight. Though my doctor tells me that she doesn't want me to lose muscle, she also tells me that I really shouldn't put any more muscle on either.
