Anyone got any tips for high protein and fibre meals?

    It's very easy. Lean meat and vegetables.

    Whole grains especially wheat bran and oats have large amounts of insoluble fiber as well as protein (not as much as meat though) and often few calories because much of the mass is not digestible.

    I make a salsa chicken casserole that is high in protein and fiber; made 6 generous servings for me at 388 calories per serving with my brands used.

    1.0 cup (dry), Enriched Long Grain Rice
    1.0 container (325.5 gs ea.), Recipe Ready - Southwest Blend
    1.0 container (562.5 g(1/2c) ea.), Black Beans, canned
    16oz Medium Salsa
    1.0 c, Mexican Shredded Cheese
    12.0 oz (112 g), Fresh Young Chicken Breast Cutlet
    1.0 tbsp, Spices - Chili powder
    0.5 tsp, Garlic Powder
    4.0 tsp, leaves, Spices - Oregano, dried

    Basically, you dump everything into a casserole dish (I also included several bean cans worth of water for the rice), and bake until the rice is cooked thoroughly. I also coated the chicken with homemade taco seasoning thoroughly.

    Only had 7g fat per serving, 30g of protein per serving, and 14g fiber per serving.

    +1 These are my typical meals. Lean meats and sauteed or steamed veggies :)

    +1 Lentil's. Google "alton brown lentil soup" for in my opinion the best lentil soup around.

    Basically I just use Skinnytaste's low-carb meals and then double whatever the protein source is. She always mixes in lots of healthy veggies for the fiber.
