Pumpkin Protein Pancakes
INGREDIENTS
3 cups (360g) Bisquick Heart Smart dry mix
4 scoops (136g) Trutein Cinnabun Protein Powder (or, your favorite brand/flavor)
2 TBL Butter, unsalted (softened)
3 TBL Cinnamon, ground
1 TSP Cloves, ground
1 TSP Ginger, ground
2 each (140g) Eggs, large
6 TBL(276g) Break Free egg whites, liquid (or, your favorite brand)
1 can (15oz.) Pumpkin
5 cups Almond Milk, unsweetened, plain
METHOD
Mix dry ingredients in a large bowl with a spoon, set aside. Mix wet ingredients in a separate large bowl, with a hand mixer or whisk. Combine wet ingredients to dry ingredients, using a hand mixer or whisk.
Use a giddle or frying pan to make even sized pancakes until golden brown, flipping once.
OR
Pour combined ingredients into a lightly greased cake pan and bake at 350 degrees for ~45 minutes, or until a knife/toothpick comes out clean. Cool to room temperature and cut into squares.
ALTERNATIVES
Add in sliced strawberries or other fruit, and/or nuts, mini chocolate chips, etc.
