mini egg frittata's!!!

I was wondering I seen people say they make mini egg frittata and eat hem during the week. I was wondering if any members here do and if so how long do they last in the fridge and how do they need to be stored.

    I do. I only make enough for a few days . however, they can be frozen and reheated.

    I would think about 2 days in the fridge, then the consistency gets a little weird for me. I make them all the time and love them though. The way I like to do it is make a batch (a dozen or so), then freeze them as soon as they cool off except the two I'll be eating the next day. I think reheating from frozen keeps them most similar to how they are fresh out of the oven. Hope that helps. They make fantastic lunches to take to work too!

    Cooked eggs are safe for 72 hours in the refrigerator according to most conserative estimates, I usually make a dozen and freeze what we won't eat in 2-3 days
