Need tried and true gluten free recipe

Hi! I wanted to make a snack for a small group (5 people) and my friend is going gluten free. So I want to respect that and I wanted to make something he could also enjoy.

Something yummy, easy to eat, served cold or room temp. Thanks!

    Hey sorry, been crazy around here. It's a school thing (about 4:30 pm). I go from work to class but I do have access to a fridge.

    My friend thinks he might have a gluten sensitivity so he is going gluten free for a while to see if he feels better. He has other relatives who are very allergic, so he thinks he might also be sensitive.

    Anything tried and true would be great. I have never done gluten free so instead of picking something at random off the interwebs I thought that perhaps someone who does gluten free regularly on here might have a good recipe or two.

    All i can think of is like cheesecake or bean dip with corn tortillas. I know, so creative right?
