Guiltless Pumpkin Pie

1 can of pumpkin
Cinnamon and nutmeg (or pumpkin pie spice) to taste
2 T coffee creamer
Optional: 2 graham crackers

Mix pumpkin, spices, and creamer to taste. Crumble crackers and mix in pumpkin.
Very low calorie and high in fiber.

    I've made pumpkin pie a few times with a can of pumpkin...
    But it's mixed with sugar, spices, egg, etc

    There is pumpkin pie filling in a can. I see a lot of recipes specifying not to use that

    I don't understand. How is that pie? There is no crust. Pie has crust. Do you eat this with a spoon? And coffee creamer - like liquid coffee creamer? Flavored? Unflavored?

    I have a recipe for pumpkin fluff dip - which is quite tasty and low cal - but I wouldn't call it pumpkin pie.

    Do you have nutritional information per serving and serving size (with and without the graham crackers) and what type of coffee creamer should be used?

    I actually think this sounds pretty good, depending on the answers to the above question.

    I think I might use vanilla yogurt instead of coffee creamer, or a wedge of laughing cow cheese and a little maple syrup.

    This really doesn't scream pumpkin pie to me.....this is like flavored squash.

    Here's a recipe that's actually a pie. Serve it to family, and eat around the crust if you need to.

    Libby's recipe can be pared down too. Swap Splenda (for sugar) - use skim evaporated milk -swap egg beaters for whole eggs. Bake crustless in a quiche pan, or individual ramekins. The calories aren't too bad.

    Pumpkin pie needs a crust preferably made with lard & butter so it's nice and flaky, brown sugar, more sugar, and the only place you can add the creamer is to my coffee while I eat my pumpkin pie

    Here's a cauliflower quiche crust, just remove the cheese and garlic, maybe add some sugar instead.


    Ingredients
    ◾Approximately 2/3 of a 16 oz. bag of frozen cauliflower
    ◾1 egg
    ◾1/2 cup finely grated parmesan cheese
    ◾1 teaspoon salt
    ◾1 teaspoon minced garlic

    Instructions

    Preheat oven to 350°F. Allow the cauliflower to thaw (you can steam it or microwave it if you need to speed up this process). Once thawed, wrap the cauliflower in a clean dish towel and squeeze gently to remove excess water. Place the cauliflower in a food processor and pulse until coarsely chopped. Add the egg, parmesan cheese, salt, and garlic. Process until finely chopped (the mixture should look somewhat like sand).

    Gently press the cauliflower dough into a greased 9-inch pie plate. Cover loosely with foil and bake for 15 minutes. Remove the foil and bake for an additional 15 minutes.

    Agree, PIE involves a crust. Now, there is graham cracker crust but that is not what your recipe is using the graham crackers for.
