Roasted Veggies with Carmelized Pineapple

3 Ingredients
3 slice (3-1/2" dia x 3/4" thick), Pineapple - Raw, all varieties
2 Tbsp, Applebutter Spread
1 container (2 cup frozen ea.), Healthy Weight Vegetables
I used my counter-top convection oven on 350. I lined my drip tray with aluminum foil, sprayed a little Olive Oil cooking spray (I forgot the veggies had butter sauce, so I don't think this is necessary), spread the box of frozen veggies in the tray (not real thin, or it dries out), mix in pineapple chunks (I keep them chopped and bagged in the freezer). Bake for about 15 - 20 minutes, then mix in the applebutter and bake another 10 minutes. Mine came out a wee bit blackened, but that gave it a wonderful texture and taste.

I think this recipe may be just as good with 1 tbsp of applebutter, which would reduce the calories. This was so delish, I could have eaten twice what I had on my plate.

This stuff was so good, that I ate the left-overs for breakfast! The sweet and juicy pineapple is magnificent! I forgot to mention that the veggies are Green Giant Healthy Weight; the one with the black beans. This was a little higher in calories than I'd like, but I had done Aqua-fitness and this was my extra calorie indulgence. This might also be good without the applebutter, but switch it up by using fresh grated ginger. Post your ideas and results. I'd love to hear.0
