Vegetarian Meals

Okay, so I live a pretty busy life style here in China, but want to eat less meat and more home cooked food (instead of the usual stop at this cheap noodle place for dinner). I just want your opinions on these meals (I'm going to start with one healthy lunch OR dinner a day - the other will probably be out). I walk several hours each day and am starting to include a basic workout routine as well. Should I add anything? What changes will you make? Will it be enough?

Day 1: Broccoli with Parmesan cheese,garlic, olive oil and rice
Day 2: Asparagus with butter, onion, garlic, cashews and rice
Day 3: Stuffed peppers (rice, onion, tomato and Parmesan cheese)
Day 4: Black beans with rice, onion, garlic and some greens
Day 5: Rice and whatever is leftover from my broccoli and asparagus collection.

To give you an idea of the rest of my meals.
Breakfast: Yogurt and coffee
Lunch: Either home cooked OR noodle soup OR dumplings OR salad (i.e ceasar)
Dinner: Either home cooked OR eat out (opposite of lunch)
Snacks: Bananas OR oranges with cranberries and tortilla chips
