2 teaspoons evoo
1 onion chopped
1 granny smith apple cored and diced
1 1/2 lbs lean ground beef
1/2 cup bread crumbs
1/4 cup ketchup
1 large egg lightly beaten 1/2 teaspoon salt
1 cup low sodium chicken broth
1/4 apple juice
4 gingersnap cookies coarsely crushed
2 teaspoons cornstarch
350 degrees spray 4x8 inch pan
heat oil in non stick skillet med heat add onion apple and cook stirring occasionally until tender 10 min add gingersnaps and cook until cookies begin to dissolve 3-4 mins half onion mixture to a large bowl reserve remaining onion mixture in skillet add beef bread crumbs ketchup egg and salt to bowl stir until well mixed put in loaf pan bake 70 min make sauce
whisk broth apple juice cornstarch in cup until smooth add to onion mixture in skillet bring to boil reduce to low swimmer stirring occasionally until sauce thickens about 1 min cut meat loaf serve with sauce 2 slices with 1/4 cup sauce 281 cal 10g fat chol 534 mg sod 21 g carb 11 g fiber 26 g prot 52 mg
