Apple Marinated Chops with Cabbage
2cup unsweetened apple juice
2 teaspoon pickling spices
4 pork loin chops lean bone in
1 tablespoon evoo
1 large sweet onion thinly sliced
1lb of cabbage trimmed and cut into 1 1/2 inch wedges
1 14 1/2 oz reduce sod chicken broth can
1 teaspoon thyme
1/4 teaspoon salt
2 large Rome apples cored and thickly sliced
2 teaspoon Dijon mustard
1 teaspoon honey
in sauce pan apple juice and pickling spices to boil remove from heat add 1 cup of ice let stand 10 mins place chops in large shallow dish add mixture adding cold water if necessary to cover chops refrigerate 4 hours oven 350 degrees spray rimed baking pan with non stick spray remove chops from marinade pat dry spray large nonstick skillet over med heat cook chops turning once until lightly browned 2 mins each side transfer to baking pan and bake till done
heat oil in deep non skillet pan over med heat add onions and cook till softened 5 min add cabbage broth thyme salt bring to a boil reduce heat n simmer 10 mins add apples to skillet cover simmer 8 miin till tender stir together mustard and honey in small bowl place chops on plate divide cabbage mixture drizzle cabbage evenly with mustard mixture
1 chop 1 1/4 cups of cabbage mixture and 3/4 teaspoon mustard mixture 254 cal 8g fat 59 mg chol 222mg sod 25g carb 6 g fib 23g prot
