NSV I RESISTED THE WINGS

So this Friday is Halloween, and my fiance and I are hosting a Halloween party. Because I grew up in a family that loves to cook, I am catering the entire thing by myself, from scratch. I am making meatballs for meatball sandwiches, Taco dip, Buffalo wings, Peanut Butter dessert bars, pumpkin cheesecake bread, and Black Forest Cherry Cupcakes. I have made everything on the list before...except for buffalo wings. My fiance wanted to order them, but ordering enough for a huge party like we're having would be very expensive, and I figured I could make them myself. However, I refuse to serve something at a party that I never made before, so I did a trial run tonight.

I was very smart and very careful. Today is not one of my planned cheat days, so I knew I could not indulge in the wings myself. Not when I'm going to be indulging at the party itself on Friday. My fiance was my taste-tester. I only made a small batch of 8 wings, just enough for him. My fiance gushed about them endlessly, saying they were the best he's had in his entire life....

And I was strong! I did not make extra, I did not steal one off his plate, I didn't even steal a bite! The old me would have easily eaten 8, 12, 20 of them by myself, and I would have slathered them in blue cheese. The new me was content to sample a tad of the sauce on a piece of celery. I will have a few at the party, that is enough. Self control....Im new at this....but I think I like it :)

    Wings were always my weakness. Finding balance, to have them sometimes, but not others, was a big step. Good work. Have fun at the party.

    Wings are hard for me to pass up but try to go for the chicken breast to be more healthy.

    i'm not one for substitutions... BUT... as a morning breakfast sandwich eggs (or egg whites) cooked flat then cut, wheat/grain sandwich thin, laughing cow blue cheese flavor, and red hot. it totally gets the wing craving!! and good protein/fiber to start the day!

    If you cook, you have to be a bit careful. You always want to try a bit or lick the spoon. That sounds like a wonderful party and should be a lot of fun.

    I found a great recipe for healthy wings. My wife and I have these on a Saturday when she watches college football. You control the heat based on amount of hot sauce you use. These wings have such a great flavor that we can live without regular wings.

    These wings do not look like that picture. However, they have that bright buffalo wing shine going for them.

    I take out the chicken when cooked, cook down the sauce in the frying pan to thicken, and then toss the chicken with the reduced sauce. We dish out some Ken's Low Fat Blue Cheese Dressing, add a bit of extra blue cheese, and some celery on the side.
