The one thing I struggle with the most is, lack of planning. My best intentions tend to go out the window each night. I have so much on my to-do list, that I end up skipping all my meal preperations for the next day. That and I"m still learning about portions and substitutes.

I would love to hear what you guys do. What your fav meals are, etc.

If you haven't got time on a nightly basis for planning, start looking at what you can do weekly. Do you have a couple of hours on a Sunday afternoon? That's when I chop and bag veggies, cook a pot of turkey chili, etc. I make sure I know in advance how much to pack (like I know it's always 1.5 cups of chili for my lunch serving). Then my mornings are so easy, I just grab and go!

I love big pots of soup or chili especially as it gets chilly outside. I make them once and have lunch or dinner for several days.
