Food help to meet my calorie goal

Hello!

My goal is to lose weight. I'm trying hard to eat the 1200 recommended calorie goal-- sometimes I range from 700-100 calories under. My problem is usually at the end of the day the protein, fat or sugar is low/used up. I eat healthily, usually the sugar is taken up by fruit like apples. What foods can I eat that is low in fat, protein and sugar but has calories so that I can keep my metabolism up?
