Homemade Poppyseed dressing for spinach salad

I was at a restaurant a few weeks ago, had an excellent spinach salad, and they gave me the recipe for the dressing. Made it at home tonight and it was still excellent. Sorry, I do not have the calorie or nutritional information, but if the sugar looks like too much, you can always sub in splenda or something else like aguave. I use a light hand to dress my salad, 1-2 T.

Homemade Poppyseed dressing:
1 T poppy seed
1/2 C white sugar (you can vary to your taste)
2 T minced onion (I used dried onion and let them rehydrate in the dressing mix)
1/4 t paprika
1/4 C white wine vinegar
1/4 C cider vinegar
1/2 C vegetable oil
1/4 C dried sweet cherries or sliced fresh strawberries

Mix all ingred, let sit 1/2 hour until flavors meld.
I used 2 cups spinach mix and added chopped red/orange peppers and scallions with approx 2 T dressing. You can get creative on what you add - sunflower seeds, pumpkin seeds, dried cranberries, apple slices, etc. Also, some grilled chicken adds great protein.
