Keto Muffins - Low Carb

Carb lovers move along.

Found sometthing Low Carb which changed my life. I haven't had anything resembling bread for 6 months. I miss eggs on toast. Burgers etc. I tried to make the oopsie bread, just like a big merangue really and not my thing.

Then I found this:

2 tblsp Psyllium Husk Powder
1 tblsp Almond Meal
1 egg
1/5 tspn baking powder
2 tspn water

Mix it all in a cup or bowl. Pour into a glass bowl lightly sprayed with olive oil (spread out even with a spatula). Microwave for 90 seconds. Allow to cool, dump it out, and do what you like with it.

You can slice in half and use for a burger, or toast it. Tonight I'm going to make one the same and cook it in the oven and see what happens, but the microwave one is fine, better toasted. Definitely edible if you're hankering for some bread like I was.
