Garlic Roasted Porkless Pork Chop

Ingredients
3 large garlic cloves
1 teaspoon dried oregano
Scant 1/2 teaspoon dried hot red-pepper flakes
2 tablespoons extra-virgin olive oil
4 chicken breast halves with skin and bone (2 to 2 1/4 lb total)
preparation

Preheat oven to 500°F with rack in upper third.

Mince and mash garlic to a paste with 1/2 teaspoon salt, then transfer to a bowl. Stir in oregano, red-pepper flakes, oil, 1/2 teaspoon salt, and 1/2 teaspoon pepper.

Cut a 2-inch-long pocket (about 1 1/2 inches deep) horizontally in side of each breast half and spread 1/2 teaspoon garlic mixture into each pocket. Coat chicken with remaining garlic mixture.

Roast chicken, skin sides up, in a foil-lined large shallow baking pan until just cooked through, 20 to 25 minutes.

    Yes, but it wouldn't be as clean.

    it has more fat than chicken especially saturated fat. i'm not one of those people that believe that you can never eat it, but it's about making better choices

    Saturated fats don't necesarily need to be feared either, and are not necesarily "unhealthy". Pork can be a great way to get in protein and fat into one's diet. A 3 1/2 ounce chop has about 4g of saturated fat in it, and people can plan around 13g or so of sat fat into their intake each day as a general guideline. MFP has me at 18, and I can easily stay under or close to it if I want. As long as people don't have any medical need to, it's okay to not be militant about fat, protein, sugar, ect intakes.

    Anything can be unhealthy if you have too much of it. But there's no need to label things as unhealthy, "unclean", ect. Moderation is key.

    I personally think this recipe would be awesome as a pork chop, or a pork tenderloin roast!

    Made this tonight but it tasted exactly like the Garlic Roasted Beefless T-bone. Also I have diarrhea.
