Diabetic Desserts

Ok so I need some help. I have fallen off the healthy eating wagon, ok so I didn't fall, I jumped off and ran! Well now I am back trying to eat better and do better. Yeah I have a cook out Saturday. I want to do a dessert but something diabetic friendly with NO NUTS and NO STRAWBERRIES! But it still needs to be yummy and without a ton of ingredients. Might be a bit of a challenge but I have faith in y'all so thanks in advance.

    No bake cake. Make some sugar free instant pudding, mix in a cup of cool whip, layer it with graham crackers in a square baking dish, top with more cool whip or whipped cream, fruit,etc, and chill for a few hours.

    Flavors are endless..chocolate, coffee, banana, berry, etc.

    Hate to be "that guy" but graham crackers = 76 g carb, 68g sugar, negligible fibre.

    So make sure you find gluten free or sugar free graham crackers.

    Thank so much.. Have to check that out. I like to take 2 squares, put cook whip light in between, wrap in plastic wrap and freeze... Kind of like a ice cream sandwich.... Thanks so much!

    And all the brands vary, I just found some that, while still high, won't send you into a coma while looking at them. But the lowest "normal" ones I've found are still 25g carb, 8g sugar.
