I've been eating baby arugula with all kinds of interesting veg in it as a salad. I cook up some cauliflower and carrots and marinate in a red wine or balsamic vinaigrette then chop it up and add it to the salad. Fresh blanched green beans or asparagus are great too, edamame, any kind of toasted nuts, corn kernels, grape tomatoes (keep them out of the fridge and they will have more flavour), raw broccoli flowerets, raw fennel. In the spring add rose petals, violets, nasturtium flowers or leaves, pansies. Make sure they have not been sprayed. Try some culinary dried lavender in a rice wine vinaigrette. Get creative. For a yummy winter salad I like hot Italian Salad - cook carrot chunks, cauliflower chunks, add raw mild onion to a Italian vinaigrette preferably home made so you can ditch the sugar (unnecessary) - eat while hot.0

Applebee's has a salad with warm grilled shrimp and bacon that I should try making at home...

I'm sure it's been said, you don't have to eat salads... Right?
Anyway here's what I do:
Baby romaine. I chop one entire head of baby romaine and wash it in cold water and dry it.
In the bottom of a large bowl I add olive oil and Dijon mustard. I mix it rapidly until it's combined. I add salt,pepper, and some hot chili flakes. Then I drizzle in balsamic vinegar while stirring rapidly.
Then I toss the romaine in the bowl.
I add shredded carrot (usually just one) and some red onion.
Then I take some salad cheese (NOT FETA) and plop it on top.
Then I mix the entire bowl and eat it.0 -
If you are not into salads you are not into salads.
Roast a bunch of different veggies and add some pasta or rice.
I will often add chunks of baked potato or yam to my plate of salad greens.
Add more than just the same old veggies to you plain salad.
I also like to add rice, beans, salsa minced garlic or green onions and avo to my salad greens.
Have you ever added Israel couscous to a salad? Try your fave greens, Israel couscous, your fave meat, feta, corn, red bell and green onion.
Use your imagination.

In a pinch, have fattoush with hummus on it. It's so good. I don't like salads that often-I think it has something to do with the water content, the volume of it all. It's something I wouldn't try to force myself on. If you are dead set on it though, I can eat a lot of foods I don't normally like (quinoa, beans) rolled up in a wrap with some mustard or salad dressing.0
