I had the most awesome lunch today...

... and I made it! I had a ground turkey soft taco w/ roasted corn & sauteed onions on a whole wheat tortilla including a bit of reduced fat cheddar cheese and some light sour cream. I also made a side of black beans that I made w/ some chicken stock, rotel, taco seasoning and sour cream.

I have to say, it was delicious and tasted so much better than anything I could have gotten at a fast food mexican joint for this amount of calories. And... I'M FULL!!

The meal totals were:

407 cals
46g carbs (yes it could be less, but I don't do low-carb very well)
11g fat
28g protein
11g fiber
1,561mg sodium (yes it's a lot but most is from the taco seasoning & I drink lots of water)

Just had to share... this healthy living thing doesn't have to be about cutting out delicious meals! Just making them better for you! :bigsmile:
