40/30/30 Lunch Ideas

I have been doing 40/30/30 for a couple weeks and I have been doing good but I am falling short on lunch ideas. I like to make my work week (4 days) of meals ahead on Sundays so all I have to do is grab and go in the mornings. I am on 1500 calories, 40% carbs, 30% protein and 30% fat. I'm not much for snacking so I try to get 3 meals with 500 calories, 45 carbs, 37 protein and 15 fat. Since increasing my workouts during the day on my lunch break I have had to slightly decrease my breakfast and lunch to add in a post workout snack. I have been pretty good with breakfast. I alternate between steel cut oats with protein powder and a hard boiled egg with a English muffin with egg, bacon and laughing cow cheese. For lunch I am good with brown rice with cream of mushroom soup, sauteed zucchini and baked chicken breast. I can eat this for the whole week everyday but by the next week I need something different. Anyone have any suggestions on something I can cook up a big batch of on Sundays that will last me all week? TIA!
