measuring body fat

i always felt like any systems that measure body fat just don't apply to really chubby people... you can pinch a ton on me, and always will be able to, i have loose skin from pregnancies and previous weight. Even after a year at my goal, the skin never went away.
The machines with electrodes seem like a load of crap to me. Please correct me if I'm wrong, but how does it measure my fat from my heels or my hands?
What is the most reliable method of accurately calculating body fat?
